What is "whitebait"...?

It is the young fish of fish such as sand lance, eel, anchovy, Japanese sardine, round herring, and herring.
It is a general term for white young fish that have no pigment in their bodies.

The fish sold as whitebait is mainly "anchovy".
Anchovy is a fish that "spawns all year round".
It is said that "the peak of spawning is in spring and autumn".
Spring shirasu are said to be "small and firm".
Autumn shirasu are said to be "fatty".

Raw shirasu loses its freshness easily, so it can only be eaten "on the day it is caught".
Please note.

After being "boiled in salt and processed", shirasu is "distinguished by the difference in water content".
①Shirasu that has been boiled in salt and drained is called "kamaage". (Water content is 85%)

②Shirasu that has been boiled in salt and dried to a soft state is called "shirasu-boshi". (Water content is 50-85%)

③Shirasu that has been boiled in salt and dried to a firm state is called "chirimen". (Water content is 30-50%)
